It's been a while since I've posted on my blog and I wanted to catch you up on all the new and exciting changes in my life.

My teenage sons are now both in college, which means my husband and I are officially empty nesters! We are moving to a new home in a different state!

What hasn't changed is my love of food and cooking from scratch for those I love. My emphasis on family, simplicity, and self improvement remains. I'm excited to share recipes, tips, and tricks that inspire you.

As I relaunch my blog, I thought it would be fitting to share my very first recipe of hummus. Hummus has strong roots in my Mediterranean culture, and it's something I like to make often for my family.

No matter what changes, this delicious dish remains a constant in our home.

From my house to yours:

Best Hummus Ever

1 can garbanzo beans (15oz) drained

2 cloves fresh garlic crushed      
                                                                    
1/3 cup tahini ( I like Mid East brand)

Juice of one whole fresh lemon

pinch of red cayenne ( optional)

1/4 tsp ground cumin

 2-3 Tablespoons of water

Salt to taste

                                                                                                                                                       

Combine all ingredients except for water in a food processor and puree until smooth. Add water one tablespoon at a time until it is as thick or thin as you like. Drizzle with extra virgin olive oil and sprinkle a bit of smoked paprika to garnish. Serve with veggies, pita bread, pita chips... whatever you like!
